Matt, I haven't found a solution. I believe the problem is caused by the fact that the 360 video is actually being created by combining 6 views based on a cube (top, bottom, front, back, left, right). When the foliage is viewed from directly above it looks different than it does when it is viewed from the sides. This is because the foliage polygons orient themselves based on you POV. This problem will need to be addressed by the developers. In the meantime, I think the workaround would be to use an image based texture for your grass material if you plan on doing 360 video.
